For over sixty years, appalam has left our production floor in KallidaiKurichi with the same character — crispy, thin, and unmistakably ours. What began as an entirely hand-crafted process has evolved with the times. The recipe, the water, and the philosophy have never changed.

The Foundation

It begins with the grain. Carefully selected, ground to our specification, and blended with Tamirabarani river water in proportions our family has refined over sixty years. The mixture is prepared and steamed to a precise consistency — the foundation on which everything else depends.

The Press

Each appalam is pressed to a uniform thinness — the exact measure that makes it crispy when fried, light when roasted, and consistent from the first piece to the last. Precision gives our customers the same result every single time.

The Sun

No artificial drying. No shortcuts. Every appalam is laid out to dry under the Tamil Nadu sky — sun and open air doing what they have always done, since the very first batch in 1961. The sun gives the appalam its final character, and we see no reason to change that.
